Day 8 : Coconut Macaroons10:47 PM
This is another of my favorite kinds of cookies. These cookies are positively amazing. Crispy on the outside and chewy in the center. The chocolate dipped bottoms don't hurt either.
- 2 2/3 c flaked coconut
- 2/3 c sugar
- 1/3 c flour
- 1/4 tsp salt
- 3 egg whites
- 1/2 tsp vanilla extract
- 4 oz semi-sweet chocolate, for dipping (optional)
- 1/2 tsp butter (optional)
Preheat oven to 325. Line a cookie sheet with parchment paper and set it aside.
In a medium mixing bowl, combine coconut, sugar, flour and salt. Stir in the egg whites and vanilla.
Drop mixture onto cookie sheet in rounded spoonfuls, about 2 inches apart. Bake for 20-25 minutes, until edges are light brown. Transfer cookies to a wire rack and let cool.
In a bowl set over boiling water, melt chocolate and butter together. Dip bottoms of cookies in melted chocolate or drizzle melted chocolate over tops of cookies.
