Spicy Honey Chicken Wraps

I came across this recipe from Rosie over at The Londoner quite some time ago and somehow it got lost in my files.  It was delicious!  I don't know how I managed to forget all about it!  Seriously - this is good!  My husband and I managed to finish the entire thing and made it again within a week!  Oh and did I mention that it's pretty healthy, too?  Quit reading and go make it already!  (Ok, you should probably at least read the recipe...)


Spicy Honey Chicken Wraps
(So I tweaked the recipe a little... you'll want to add more hot sauce if you like your food on fire)

  • 3 chicken breasts, cut into strips (or about 12 chicken tenderloins)
  • 2 medium tomatoes, diced
  • 1 lemon
  • 1 tsp red pepper flakes
  • 2 tsp paprika
  • 4 Tbsp hot sauce of your choice (my pick, Cholula)
  • 3 Tbsp honey
  • 5 Tbsp olive oil
  • large pinch of kosher salt
  • Guacamole (see below for the recipe)
  • Sour Cream
  • Spinach
  • Flour Tortillas
Guacamole:

  • 3 ripe avocados
  • 1/4- 1/2 tsp garlic powder
  • large pinch of kosher salt
  • lemon juice (about half a lemon, or to taste)
Combine the lemon, red pepper flakes, paprika, hot sauce, honey, olive oil, and salt in a large bowl.  Add the chicken and toss to coat.  Cover and allow it to marinate in the refrigerator for an hour.  

While you wait, you can prep your other ingredients.  Mash the avocados with a fork and stir in the garlic powder, salt, and lemon juice.  I tend to do this more by taste than measurements - add more of the salt, lemon, or garlic until it tastes right to you.  Set aside.  Chop the tomatoes, get the tortillas, sour cream, and spinach ready for the assembly line.  

Heat a large frying pan over medium-high heat.  Add the chicken, cover, and cook for a few minutes on either side until cooked through and nicely browned.  When the chicken is done, remove it to a serving plate and throw the tomatoes into the still-hot pan.  Add 1/4 - 1/2 c water to the pan with the tomatoes and cook for a few minutes as the tomatoes begin to break down and create a  nice sauce.  Pour this over the chicken.  

Wrap up in a tortilla - guac, spinach, chicken, and sour cream.  Enjoy!
